another snow-day for the girls



I took this picture out the window over my kitchen sink yesterday evening. 

No school today.  I cook a little differently when the girls are here for dinner (the noon meal).  And yet, I try to cook things that are low-fat and healthful.  These granddaughters really are not fussy eaters, so we do fine.

Yesterday we had tuna-noodle casserole; it's a great comfort food for days like these, and Monica and Natalie can't get enough of it.  I've made the recipe over somewhat, with less salt and fat, so it's good for us.

Today I have chicken breast thawing, and I plan to make oven-fried chicken (which isn't fried at all, but has a coating rather like Shake-and-Bake... without so much sodium, though).  It's another dish the girls like.  I'll make scalloped potatoes from scratch, and have broccoli, I think.  Or maybe glazed carrots.  Perhaps both.

I really miss my daily walk, but with our single-digit temperatures, the ice outside isn't going to melt any time soon.  There's an exercise bike out in the shop that I might bring inside for the duration of this cold snap, much as I dislike those instruments of torture.

It just occurred to me, I haven't been off the place Monday of last week.  No wonder I'm slightly stir-crazy, confined to the three rooms of this house that are heated!

A nice colorful meal, full of vitamins! I, myself, bought the ingredients for Taco soup and will make that today!

brrrrrr now that is a COLD picture! I see y'all got some of this nasty weather as well. Stay warm and safe. Hows your horse doing now?

this ice is bad on those hooves :(    my old horse is barefoot this winter, when I lived in N.MI where I am from, I used to keep special Barium Rubberized shoes on his feet so I could ride all year round.

Tuna and noodles is a favorite of mine !  Good you have those granddaughters for company in your confinement.  I know you are counting the days til you can get out again.  Me too ! I do get out and go to work of course, but that is not the same for sure.  I have so many crafts that I'd like to do that being confined in the winter wouldn't be a problem for me.  I have a quilt to finish, several items to paint, yarn in a bag to make something, and shelves full of ideas just waiting for me.  Someday.  'On Ya' - ma

Everything looked great (Re the picture) and sounded fine (re nice nutritious meals) until you mentioned being couped up in only three heated rooms for a week.  Now you have my utmost sympathy.  I can see how you would start to feel like you are going stir crazy.  I hope relief comes soon.

I love my exercise, ah-hem, I mean torture equipment too and am going quite stir crazy with it in storage til the house closes.  Maybe I should think about borrowing my sister's?  What if I break it?  Amazing how the brain thinks of excuses from actually using torture equipment.... snow days... those are truly the best!!!  Maybe we will have one yet this year here in KY!!  Hugs,
