healthy snacks

Since Cliff isn't supposed to have salt, I'm searching our low-fat cookbooks for something he can snack on safely.  After leaving out an ingredient of this one the first time I made it, I got the second batch right, and Cliff loves it.

SWEET AND SPICY POPCORN

6 cups of air-popped popcorn
2 tablespoons sugar
2 teaspoons water
1/4 teaspoon ground cinnamon
1/8 teaspoon ground nutmeg
1/8 teaspoon ground ginger

Spray a cold 13X9x2-inch baking pan with nonstick spray coating.  Place popcorn in the pan.

In a small bowl stir together sugar, water, cinnamon, nutmeg and ginger.  Add spice mixture to popcorn in pan and toss till coated.  Bake in a 350 degree oven for 15 minutes, stirring once or twice.

Transfer popcorn from baking pan to a large piece of foil.  Cool popcorn completely.  If desired, store in a tightly covered container.  makes 6 (3/4) cup servings.

76 calories, 2 g protein, 16 g carbohydrate, 1 g fat, 0 cholesterol, 1 mg sodium, 40 mg potassium

If anyone has snack suggestions, leave a comment.  Cliff is going to miss the Chex mix and pretzels he always took in his lunch to work.

Take it from a guy who has high cholesterol, and can't have salt either. You'll eventually find a lot of good stuff for him to eat. I would say talk to a nutritionist if you can, they're great for that kinda stuff.

That sounds really good Donna.... and it is nice that Cliff likes it too. I have never heard of it before. I'm going to save it for a time I will want a nice snack too... doesn't look like many calories either. Thanks for sharing and if I come accross one I will send it on.

I would miss the chex mix as well!  Cliff is so lucky to have someone who is going to watch over him.  Your a special lady!!

Donna, you can buy Cliff some salt free pretzels.  My Mom buys those.  In fact they are salt free and fat free..Just a thought.

Stay out of them so called healthy diet food isles at the market. Them products can kill a body. Them canned and packaged goods got more of that every/very krap in them than even healthy people shouldn't eat it. And that junk costs more.
How about some dried fruits and vegetables. Raisons, figs, and apricots come to mind. I also like munching on frozen peas. Yum! And, frozen peas make a nice cold pack. We get them for us, our TV munchies. I like Cheerios(?). Some stone ground whole wheat Fig Barr’s (0* salt) Are all right once your used to them. So rich, I can't eat more than four or five a sitting. Kool-aid mixed 50/50 with soda pop makes for one of my favorite drinks. The off brand sodas (chain store labels, Faygo(!)) are lower or without what's in most major brands.
How about oranges. I tend to barf at the sight of OJ in a glass since hepatitis, but can peel and eat an orange. The potassium would be good for him anyways.

Cayene pepper is awesome on air-popped popcorn.  Only problem is that it doesn't stick too well -- so just eat the kernels out of a bag and keep shaking the bag as you go.  Welcome home, Cliff!

How are you poopping the popcorn? Most microwave popcorn is not airpopped. They are popped in oil.
Gingersmaps are a lowfat cookie.
Remember watch out for the real biggie nono TRANSFAT!
I like a bit of Parmesian cheese and garlic powder on my popcorn.
