potato cakes for dinner

Since Monica and Natalie were here today for dinner (our noon meal) I figured this was a good time to get rid of the leftover mashed potatoes from last Saturday.  I told the girls we were having pork cutlets, corn, and potato cakes. 

"What's that?" Monica asked.

"You girls never had potato cakes?"

They both assured me they had not.

Usually when I spring something new on them, I tell them they can take a small bite to make sure they like it, before I serve them a helping of it.  But this was one food I knew they'd love, and I told them so.  They took me at my word, and ate with gusto.

Of course, their grandpa talked them into ruining the true flavor with tons of ketchup, but they did like their potato cakes:  so much so that there wasn't a crumb left.

I really don't use a recipe, but here's one I found on the Internet that is very much like mine.

Easy Potato Cakes

* 2 cups leftover mashed potatoes
* 1/4 cup finely chopped onion
* 1 egg, beaten                    1/3 cup flour

* 1 teaspoon salt
* dash pepper

 Add onions to mashed potatoes. Mix in the beaten egg, flour, salt, and pepper. Shape into patties. Melt Crisco in skillet over medium low heat; brown patties until cooked and browned on both sides.

Ohhhhh we have potatoe cakes alot here!!  Who doesn't like potatoe cakes???? You mean there might be someone??? lol..  Great pic of them cookin' by the way.. hmmm makes me want some but don't have any leftover potatoes right now lol

Wow, Mo, I've made potato cakes before but none of them ever looked that beautiful.  I've never used a recipe like yours though.  I just patted the leftover mashed potatoes into a cake and browned them in oil or shortening.  Most of the time mine fell apart when I tried to turn them over, and as usual, I was cooking them too fast.  I never used low heat either.  Thanks for a lesson learned!.......Love, Sam

I love potato pancakes! O.K..... let me reword that ... I love my grandmother's potato pancakes. It was always one of my favorite things when we visited her when I was little.

I love potato cakes !  Problem is I never have any left over mashed potatoes anymore.  I used to buy some kind of package mix to use when we were camping - I'll have to look for it in the store.  You've made me hungry for them !

And I make mine just like you minus the onion.  But I'll try that too!  Sounds good!

thank you, thank you, thank you for this entry!!!  the other day I wanted to use up some mashed taters too, so I heated the skillet up with some oil, then took the potatoes and scooped and flattened them in the pan.  You know what happened....... they just fell apart.  Couldn't eat them.  :-((   Now, I'll be prepared to do it RIGHT next time!  and no ketchup on mine, please.  I LOVE applesauce on mine!!!  Oh Yummy Stuff!!!!  :-))))))

You're killing my diet here! LOL!   That is pretty much how I make mine, my Grandma taught me it was a good way to get rid of left over mash tatos...the only thing I do different is I crunch up a bit of crackers in mine. They are yummy aren't they?

I just saw Paula Deen on tv today making what she called Vegetable cakes...same concept only with carrots and zuch.

Potato cakes are sooo good. My mama use to make them and then I did when we had any mashed potatoes left. Don't cook much anymore since we go to the center to eat for $3.00 or up the street to the hospital cafeteria where we belong to senior circle. Paula

OH, I know we'd love these!  We like hashbrowns and bean patties.  Mom would take her leftover mashed potatoes, spread them in a 8x8 pan, top with cheese and bread crumbs, bake until hot.  -  Barbara

Yumm!  My mom used to make these from left over mashed potatoes too!  
Gosh.. now that I think about it.. I haven't had them since I was a kid, and we both know that was a looooong time ago! lol
